Weekly Recipes 9 {if this week included T.giving as well}

I’m back. I finished Nation Novel Writing Month 2015-I wrote an entire story and it is longer than the 50,000 word requirement. I plan to edit it and work to get it published. I don’t know how all that words so if you have any tips let me know.  At the tale end of the month we celebrated Thanksgiving with the four of us. We missed Kaylee but she always spends this holiday with her mom in St. Louis.  I wanted to enjoy the day, not be crazy about writing, and still have good food on the table.  So this is what happened.

I planned an easy menu. I decided I wanted U.S. grass-fed steaks (which we bought while in the Twin Cities), and to please all my people I made three different kinds of potatoes; sweet potatoes for me and I made those a day ahead, mashed potatoes with gravy for the men, and roasted red potatoes for Groovy Girl.  What can I say, we like potatoes.  We had fresh green beans, just sauteed a bit in coconut oil. I always make fresh cranberry sauce that doubles as jam for our bread (this time we bought it from Panera).

The thing I was most concerned about was gravy.  I needed gravy for those mashed potatoes and I did not want to get it out of a jar and I didn’t have pan drippings to create my own.  So I did a little research (which means I googled it) and found an excellent recipe that I will make again come Christmas dinner.

The gravy recipe is from Chocolate Moosey.  I used veggie stock and it was a light color (think biscuit gravy) but the taste was phenomenal. It made enough to fill a quart-jar with leftovers that we used (still using for leftover potatoes). That was the gravy recipe I was searching for the whole time we were vegetarians.  Now I’ve got it.

The cranberry recipe is from Epicurious. I love listening to the tart round berries popping as this simmers. Nothing says holiday meal like that sound in my kitchen.  That and wine pouring. I still have leftover sauce and I used it just last night on a piece of homemade bread.  Yum.

Those are my only two Thanksgiving recipes to share except my husband made an excellent sweet potato cheesecake that deserves it’s own post. Playing catch-up for not cooking much in November I made two fantastic meals over the weekend for my husband and son to enjoy together. Groovy Girl is out of the country and not spending every waking moment hunched over my typewriter has freed me up a bit of extra time.

I literally whipped together a dish the other night using diced butternut squash, a pound of farmer-bought hamburger, a Trader Joe’s curry simmer sauce, and Israeli couscous.  It was delicious and I should have snapped a photo. That and a nice big green salad and dinner was on the table in about 40 minutes.

Yesterday I had the pleasure of creating a recipe from start to finish which is truly one of life’s joys. When you can cook unhurried and enjoy the process.  I planned the menu, I made a batch of dough in the morning that would be ready to bake by dinner, and I set a time early enough that my son would be able to stop here and have dinner before heading to work.

I made a really unique beef stroganoff that was amazing. The sauce, rich with mushroom flavor and pearl onions, would also pair perfectly with tofu-which would gladly soak up the sauce. The recipe is from Serious Eats and I liked reading all the research that went into making a better stroganoff. I don’t know what possessed me to choose this but it was a fun recipe to try.

I did it! I set a goal and persevered…

I managed to stick with it and finish the story I started for National Novel Writing Month-November.  From afar I’ve watched other writers tweet and post about this amazing challenge and I was curious.  I don’t know what spurred me on this particular month but I went for it.

And I finished with more than 50,000 words.  I think my story has something to say to teens and young adults, it’s a little bit thrilling, and filled with a cast of cool characters.  I am going to spend December combing back through it, revising it, and trying to add to it.  I would love to find the right path to publication.

This month has been a month of firsts and I’m so glad I can add #nanowrimo15 to my list of accomplishments.  Groovy Girl danced along side professionals from the MN Ballet; this was super thrilling to her, my husband and I took a mini-vacation together (these are pretty infrequent), and I got together with two college friends that I hadn’t seen for many years and I missed them in my life so much-nice to write 50,000+ words in a month and have a wonderful gathering with old friends.

The other major first is that we’ve been preparing Groovy Girl for a long-distance adventure. Passports, bags, summer clothes, bug spray, and books have all been purchased so she can head to Nicaragua on a mission trip through Rotary and our church.  Groovy Girl and I have contributed to the shoe box project which helps kids transition to school, and now she will have the opportunity to help in person.  She leaves early Wednesday morning and will be gone for a week.  Bon voyage. We know she will come back a changed young woman.

I’m saying farewell to November with a huge smile on my face. I’m welcoming in December knowing I will be able to relax a little more, and face new adventures as well.  Hopefully I can get back to writing here on a more regular basis. We ate some delicious food on Thanksgiving and it wasn’t turkey-I want to share those recipes with you soon.  Until then-be peaceful…

Taking November by storm…

I feel terrible when I look at this blog that I love so much and see that a month is half over and I haven’t posted books or recipes or even what my life is like.  If I review blog posts many of them share a common theme of crazy busy happy life.  The month of November has been like that + more, like us amped up on lots Halloween candy.

Groovy Girl is in rehearsal for The Nutcracker with the Minnesota Ballet through her local dance studio.  She is excited to use her dramatic and dancer skills in such a favorite production.  We’ve gone several times to this show as she was growing up and I remember the first time like it was yesterday. She had on a magical deep blue dress and she couldn’t sit still. Luckily we were sitting on the aisle in a front balcony and I could let her dance next to me as the dancers on stage made her want to dance with them.  The performance is soon and I will be happy to watch her perform and then happy to cross it off my schedule.

While she has been busy with that I decided at the end of October that this was the perfect time to try my hand at National Novel Writing 2015 so every spare moment between her rehearsals for Nutcracker and regular dance classes (5) and cheerleading activities I’ve been piecing together a story.  I’m at about 21,000 words and I need to write double time to finish by November 30th. I don’t know if what I am writing is good but it feels fantastic to write it out.  Several pieces of the story are real events that I’ve always wanted to incorporate into something real.

I also threw in two weekend trips because they were already scheduled and I wasn’t going to give them up.  My husband whisked me away to Iowa City for a night away-I was able to do some writing there.  I also had a date with two college friends in St. Paul and that provided research as that is the setting for my story.  It all works out. That’s my mantra.

Work is also crazy right now even though about a week ago I felt caught up-in that one moment because now I’m racing to get things finished up for conferences and our Scholastic book fair which occur very quickly after Thanksgiving.  Oh and I am really looking forward to that lovely day of relaxation with my family.  We are eating very unconventionally and then have a playdate with freinds for board games and cocktails at our house. Hopefully by then I will have really caught up in my daily word counts for nanowrimo2015 and I won’t feel a bit of guilt as I hang out with friends.

Happy Mother's Day!

I hope everyone that is a mother had a wonderful day!  Being a mother is truly the hardest job; it comes with a lot of heartache and judgement.  My kids are not always happy with me, my ideas, and my suggestions.  I want the best for them-always.  Even though it is a difficult job I love being a mother and the payback can be amazing.

It’s funny how the day started out as such a humble celebration, it was a way to honor and connect mother’s who sons had fallen in the Civil War and later as a way to promote peace.  It’s unfortunate that the holiday became so overly commercialized.  I do appreciate the simple things my children do for me.  I ‘m happy with a meal together and several hand made cards.  Today we went for a walk, out for lunch, and a visit with my own mother.  It was a good day.  A simple day.

I also made chocolate chip cookie bars for school and folded laundry so it wasn’t like I chilled the whole day.  It might be nice to pampered all day.  Right now BB is the important event at my house as I write and plan for my day tomorrow.

How ever you spent the day I hope it was relaxing and the focus was more on a shared experience than “stuff”.

2015-Happy New Year to You.

I can’t believe it’s here!  I don’t have everything checked off my list from 2014!  Do you?  I still have miles to go in fact.  I didn’t write enough, didn’t do enough downward dogs, and I’m three books behind on my Goodreads challenge.

I can reflect back and know that while I didn’t get everything done I did get so much accomplished. And I’m grateful for the year that I’ve had especially school-related.  I didn’t think I could love kids the way I loved Highland students but Hansen proved me wrong.  Grateful.

I’ve survived a year with handsome son out of the house and living in Colorado.  I miss him fiercely but I’m happy he’s working on the next part of his own journey.  I love to text back and forth with him and have received some amazing messages from him throughout the year.  Grateful.

Groovy Girl and I have survived the first half of 7th grade together.  Middle school is harsh because her elementary school was like home; filled with love and understanding.  Middle school is the opposite of that. Rules, rules and more rules.  She’s learning though and I’ve learned to listen as she rants about this teacher or that rule.  In the long run we’ll both be better off.  Grateful.

I’m happy that oldest daughter has figured out her next step after graduating in May from Oberlin. She’ll be off to Portland, ME in a week to study at the The Salt Institute for Documentary Studies.  Just browsing their website makes me know she will love it.  It’s good when each person knows what their next step into space is going to be.  Grateful.

This new year will bring more surprises, more journeys, and more inner peace.  What will the new year bring for you?

It's a new month! I liked August.

I wasn’t even really ready for August to end.  For me August could be a double month.  I’ve had one major project to accomplish today and it is to clean off our antique blue bench which holds our mail.  Right now it is holding a large basket of unread magazines, a stack of books THREE stacks of books, and a mass of mail.  Mostly the mail we don’t open.

I easily went through the mail basket and filled up the paper recycling bin.  Going through the magazine basket was a lot harder.  Old Martha Stewart’s called my name, last year’s Bon Appetit”s beckoned me to the pages within, and a couple of catalogs caught my eye as well.  It takes much longer to get things into the recycling bin when you page through everything.  It takes even longer when you decide to stop and write about some of what you find.

In an article about Russ and Daughters, a longstanding deli in New York City’s Lower East Side, a few recipes were shared.  It doesn’t matter that the MSL is circa Sept. 2012.  I’m sure the deli is still there (it is) and these recipes will still be fabulous. Now I need to get myself back to NYC so I can give Russ and Daughters a try.

In the meantime I will satisfy my craving with these two recipes:

{From MSL}

Bagel Pudding with prunes and raisins
serves 6-8

3 large eggs
1 large egg yolk
1 cup sugar
1 T. vanilla
1/4 tsp ground cinnamon
2 cups half-and-half
1 cup whole milk
4 or 5-day-old bagels, crusts removed and cut into 1/2-in cubes (8 cups)
unsalted butter, for baking dish
3/4 cups halved pitted prunes
3.4 cup seedless raisins
vanilla ice cream, for serving

1. Whisk together eggs, egg yolk, sugar, vanilla, and cinnamon in a large bowl until smooth.  Whisk in half-and-half and milk.  Add bagel cubes, and toss to coat.  Let mixture sit, stirring occasionally, until bread absorbs some of the liquid, about 1 hour.

2. Preheat the oven to 325*. Butter an 8-inch square baking dish (2 inches deep). Stir prunes and raisins into bagel mixture, and transfer to baking dish.  Bake until top is golden brown and a toothpick inserted in center comes out clean, about 1 hour (if top browns too quickly, tent with foil).  Let cool completely on a wire rack.  Cut into squares, and serve with ice cream.

and then this fantastic beet recipe:

Beet-and-Lemon-Shrub
makes 6 1/2 cups

5 cups water, divided
2 T. white vinegar
1/2 cup sugar
1 cup fresh beet juice (from 1 1/2 lbs of beets) (use a juicer)
1 cup fresh lemon juice (5-6 lemons)

1. Whisk together 3/4 cup water, the vinegar, and sugar until sugar dissolves.
2. Combine remaining water, the beet juice, and lemon juice, and mix well.  Stir in vinegar mixture.  Refrigerate 48 hours before using.

Use that mix in this:

Beet-and-Lemon-Shrub Cocktail

6 1/2 cups Beet-and-Lemon Shrub recipe
12 ounces of vodka
ice
24 ounces of seltzer water
12 wedges of pickled green tomato, for garnish

1. Mix together shrub and vodka.
2. Fill 12 8-ozs glasses with ice; add shrub mixture.  Top off with seltzer, and garnish with pickled green tomatoes.  (I might think to garnish with lemon wedges as an alternative)

What I’m reading other than this pile of magazines is River of Ghosts by Robert F. Gish (father of the ever lovely and talented Annabeth) for my Sept. book club.  I’m going to finish it even though he is
w-o-r-d-y.

Easter Blessings

Once again I’ve inadvertently let a week traipse right by without a bit of writing. It’s been a busy week and that excuse is ever present yet this week there was an added snafu.  My lithe little MacBook Air died or so it seemed.  It did some kind of strange fake death worthy of a Shakespearean play. I could get it to make the sound and the white apple would appear but then before you could say Macbeth the screen would go black.  Stupidly I kept trying it whilst pushing button combinations.  After 4 days of that nonsense I sent an emergency text to my friend and co-worker, Al, who embodies the word super techie.  Thank all the powers that be for people like Al, including Al, as he always been able to help me out.  MacBook Air is back up and running as of yesterday.  Don’t ask me what he did as I prefer to think that he waved his magic wand three times right over my silver baby and viola!

Now let’s talk food.  While everyone around me talks about their Easter ham we are bucking tradition, pretty normal here, and making a large Alaskan wild caught salmon.  Groovy Girl loves fish and she can pretty much finish off an entire plate of fish herself so I bought extra. Added to the fish we will have copious amounts of roasted brussels sprouts, baked sweet potatoes, a little green salad, and strawberries and chocolate for dessert.  Nothing on the menu that even needs a recipe other than what’s already in my head. A deliciously simple meal to celebrate Easter, leaving me lots of time to relax with my family.

I was going to make this yummy carrot-ginger soup for dinner. A friend made this soup for our last book club and I’ve been waiting for this holiday to make it.  I thought the Easter bunny would dig it! Instead I mopped up water in our basement. I guess while I was carpooling for Groovy Girl’s theatre rehearsal my husband, while doing some Spring yard work, inadvertently created a huge water leak in the basement.  I came home to huge puddles  lakes in the three rooms of our basement.  Not nearly as much fun as making soup.  We ate Jimmy John’s after a trip to the hardware store to buy a wet-dry vac.  Last time we had water in the basement we borrowed a friend’s and felt that this was an important purchase for us though we hate buying things.  I could put bunny ears on the wet vac as this present is better than any other Easter basket I could have surprised my husband with this holiday.

Weekend Cooking; Fresh pizza dough

I made pizza this weekend and it turned out fantastic.  The dough was triple light and airy because I rolled it out early and let it sit on the pizza stones in the oven for 3 hours while I went to another event.
When I came home and pulled the stones out of the oven to decorate the pizzas and let the oven heat up the dough was this puffy, airy mass.  I poured some red sauce on and set it in the middle of the table.

One of our little guests, Jackson, took a break from petting Sadie the rabbit to help me put topics on the pizza.  YES, mother, he washed his hands thoroughly before adding straight  cheese and a few tiny mini sausages to the kid’s pie.  He liked helping so much he topped the adult pie as well with sautéed mushrooms, black olives, fresh spinach, and plenty of cheese!  I didn’t want to seem like a dweeb as we made these pizzas but they were picture-worthy.  Thank you to Jackson for you pie decorating abilities.

Here is the dough recipe I used

Pizza dough 
adapted from Rodale’s Basic Natural food’s cookbook


2 cups warm water
2 T. local honey
2 full T. of yeast
3 T. vegetable oil
5-6 cups unbleached flour-can use a mix of white and whole wheat


In a large bowl combine warm water, honey, and yeast and let proof.  (Proofing means let it get active, it will be bubbly) Then add oil and enough flour to make a firm dough.  Turn dough onto floured surface and knead until smooth and elastic., adding flour as need.  Place dough in a well-oiled bowl, and turn over to coat.  Cover bowl with a damp warm towel and let rise in a warm place until doubled, about 1 hour.  


Punch down dough, knead briefly in bowl and let rise again. Then divide dough into two balls.  Form each ball into a flat circle and roll out into a circle. I use my Pampered Chef silicone mat for this and it makes it so easy to lift up the dough flip it and turn it over.  

We used most of the dough up last night but the rest is going to be turned into a calzone for tomorrow’s lunch box main dish for Groovy Girl!  I’m off to create that with her now.  This holiday time make some dough and have an easy pizza party. I had all my ingredients prepped and in lidded containers so I could just whip them out and let Jackson go to town.  It made for a very easy entertaining trick.

Weekend Cooking; The holiday recipes

Ohhh, we had a lovely Thanksgiving Day, filled with good food and a visit from dear friends.  I made a simple roast chicken, baked potatoes, roasted brussels sprouts, and fresh cranberries.  Everything was easy to put together and I didn’t spend much time in the kitchen.  The highlight was putting together 2 desserts; a sweet potato pie (which we much prefer over pumpkin) and bread pudding with bourbon sauce.

Bread Pudding recipe (adapted from an old Vegetarian Times recipe):
Oven at 350*

3 large eggs + 2 egg whites
1 cup skim milk
3/4 cup maple syrup
1 tsp vanilla
1 1/2 tsp cinnamon
1/2 tsp freshly ground nutmeg
5 cups, cubed day old whole wheat bread (1/2 cubes/I say bite-sized)
1/2 cup raisins
1/2 cup dried cranberries


Whiskey Sauce:
1 cup brown sugar, 1/2 cup water, 1/4 cup bourbon


To assemble:


Whisk together first 7 ingredients.  Fold in cubed bread, raisins, & cranberries.  Let stand for 5 minutes or so to allow the custard to absorb into the bread.
Coat 9-in square pan with spray and spread mixture in pan.  Bake 35-40 minutes until no egg mixture is bubbling up.  
While it is baking make the sauce:  In a small saucepan heat the water and brown sugar together. Boil on medium heat for two minutes.  Remove from heat and add in bourbon.  Boil two more minutes.  Remove from heat and transfer to a small pitcher and allow to cool just a bit.  Serve warm over bread pudding.  Serve in bowls with homemade whipped cream on top.  Yum!

We also started our day with a quick brunch that included homemade Bloody Mary’s.  It was a trial run for another Christmas event that we always host that includes family friends and a hunt for an evergreen tree.  Instead of buying Bloody Mary mix I wanted to try  my own and found a keeper in this recipe. If you love Mary’s as we do, this recipe will make you smile and it was very easy.

One year I made fresh cranberries and I had a perfect recipe that used less sugar adding orange juice for flavor~I didn’t save the recipe (pre-Pinterest) and can’t find it but I did find this recipe and I just squeezed in a whole orange from my counter.  I love, love the bright taste of this fruit and wonder why we don’t eat this all year long!  I saved this recipe and will make it again at Christmas time for teenage boy who loves this crisp red berry as well.

What a beautiful day it is!  I have a farm fresh chicken, nice golden bakers, brussel sprouts, and fresh cranberries all waiting to be cooked.  A simple meal that won’t take me all day in the kitchen.  I made a sweet potato pie last night which looks amazing.  I’m going to throw together my lovely bread pudding recipe with bourbon sauce this morning as I watch the parade.  Excessive on the desserts as we are having good family friends come to share them with us and play a game. Perfect day all played out in my jammies. I slept until 8:30 this morning.  Amazing!
I am forever thankful for my husband, my three creative children, my mom, my step mom,  my in-laws, my two sisters, my six brothers, my school family, my friends Barb, Verda, Jennifer, Tina, Diane, Rita, and my new friend Gabbi.  You all bring so much to my life.  Life is rich and full with good food, excellent and bountiful books, and happy memories.  I feel blessed.
